HOSHINOYA Bali Unveils a Dining Tale Connecting the Plate to God, Nature and People

Bali, March 2024… HOSHINOYA Bali recently unveiled the Bali Harmony 8-Course Set Menu Dinner, crafted to honour the Balinese traditional way of life and age old wisdom through cuisine. It highlights the profound connection of the plate with Tri Hita Karana philosophy, which encompasses harmony between God, Nature, and People.

Each entry showcases interpretations of this philosophy, resulting in a fine dining experience featuring authentic flavours imbued with opulence, drawing inspiration from Bali’s culinary heritage and local Hindu Bali celebrations.

Balinese food culture and tradition together with heirloom ingredients and typically home cooked dishes with seasonal produce give birth to cuisines such as the ‘Ceremony’ Amuse Bouche and ‘Puja’ or Pray vegetable dish.

Bali Harmony showcases HOSHINOYA Bali’s refined gastronomy evolution through dishes that celebrate the unique and vibrant ingredients of local heritage, nurturing a stronger connection to Balinese culture and adds a bespoke element to the overall HOSHINOYA Bali experience for diners.

Amuse Bouche – Ceremony

Amuse Bouche, symbolizing religious worship and ceremonial celebration.

Consisting of 5 dishes typically served during Galungan and Kuningan

Lawar Tortelini, Skewer Lamb, Salmon tartar, Betutu Cannelloni, and Crispy Lak-Lak

Soup – Melukat (Purification)

A clear soup symbolizing Melukat or cleansing ritual using water

Consisting of 3 kinds of Tomato & Water Melon Gazpacho, with scallop confit and prawn

Risotto – Rice Field

Symbolizing harmony with nature seen in Ubud rice fields and its ducks

Duck Risotto with black spice, grated coconut, and served with Red, Black and White steamed rice.

Vegetable – Offering Prayer

Combination of colorful local vegetables symbolizes canang sari Bali Hindu’s daily offering to God

Gado – Gado Boiled Mix Vegetable and Snapper served with Peanut sauce

Roasted Fish – Sea Under Mountain

Depicting Bali’s ocean catch of the day harvested in the morning with the beautiful mountain background

Seared Seabass, spinach, roasted tomato and dragon fruit condiment, served with clam juice and tobiko

Beef Steak – Mother Earth

Meat prepared in traditional hearth-baked cooking technique using banana leaf and coarse salt wrap

Roasted Beef Andaliman with red onions, pumpkin, potato, and paprika served with brown stock and green herbal sauce.

Avant Dessert Refreshment – Recovery

Avant Refreshment symbolizing recovery of the body

A local fruit sorbet mixed with traditional herbal drink or Jamu, called Loloh Cem Cem

Last Dessert – Tilem (New Moon)

A dessert featuring local Balinese Chocolate with variety of taste, texture, & looks to cleanse the palate

Selection of local Balinese chocolate bites with caramelized banana and cashew nuts
